Warm Up With Mexican Soups

It’s been a frigid winter in Boston this year with several visits from the Polar Vortex taking us down to near zero temperatures complete with wind, snow and ice.

With the chilly weather, we have to admit that there are times when you don’t crave tacos as much as you do a nice warm bowl of soup. So we’ve gathered a few of our favorite Mexican soup recipes to share.

To start, of course, there’s Tortilla Soup, created in Mexico City and now an American classic. Most recipes here in the US are like Chicken Noodle Soup minus the noodles with a big kick of flavor and spice, and a great way to use up leftover chicken or a rotisserie chicken from the store. The Pioneer Woman’s Chicken Tortilla Soup recipe is a good example.

But we love the approach in this video, where the base comes from scratch in just a few minutes. And you still get all the great toppings of tortilla strips, avocado, queso fresco and more.

If you’re feeling a cold coming on, maybe you should try Sopa de Lima, or Mexican Lime Soup. You get the comfort of a warm soup plus a pack of citrus to help you fight that bug. We’re fans of The Homesick Texan’s recipe.

And lastly, you can go for something totally different by making Posole, a soup made with pork and hominy. Definitely a change from your typical soup, you can make Posole red or green (just like salsa) and it’s a Mexican favorite for January and the New Year.
